My Favourite Recipes for Perfect Pancakes

‘English’ Pancakes:

Whisk together 120g plain flour, 1 egg, 570ml milk and a pinch of salt. Heat a crêpe pan or large frying pan to medium/hot and add a light spray of oil*. Pour in roughly 2tbsp of your mix and tilt the pan until it’s covered and the pancake is very thin. Cook for 1-2mins without touching it, then go for the toss! Cook for another 1-2mins and serve – we love classic sugar and lemon but these are great with a savoury filling too.
* We’ve found a dab of old-fashioned lard works best.

‘American’ Pancakes:

Whisk together 1.5 cups plain flour, 2tsp baking powder, 1/2tsp bicarb, 1tbsp sugar, 2tbsp melted butter and 1.5 cups buttermilk. Heat a non-stick griddle pan or large frying pan to medium/hot. Spoon 4tbsp/a ladle-full of your mix into the pan and cook until little bubbles form on the surface (about 2-3mins). Flip and cook for another 2-3mins, then serve – crispy bacon and maple syrup is our favourite topping!

† If you can’t find buttermilk in the shops you can make it – add 1tbsp lemon juice to 1 cup milk, stir and leave it sitting for 5mins to thicken up before use.
